Until the nineteenth century, its production was very traditional, made from wild roots of lavender varieties, or fine lavender and spike lavender. In the twentieth century, with the rise of perfumery, demand soared. It was then that a hybrid of the two species used so far was created: lavandin, grown from 1930. Lavender is harvested in July or August depending on the region.
