Violaceae family

Violet has been grown in the region since 1755, but intensive production didn't take off until the nineteenth century. Viola odorata flowers, grown between Vence and Tourrettes-sur-Loup, are harvested in March, but no longer only interest florists ; the leaves release a green note quickly adopted by perfumers in search of original raw materials. The flower extracts were reconstituted by chemists in 1898.
